I made my own past. . . and took time to do well. . I ended up doing more than I wanted because I had to keep adding things to get as I wanted to. So is easier to buy. . if you can still get something healthy.

Here is a recipe that is used: 10 Fresh Anaheim (aka New Mexico) chiles 1 / 4 cup olive oil 1 large onion, peeled, chopped 4 large cloves garlic, peeled, pressed or mashed in a mortar with 2 pounds of boneless pork shoulder or butt lean, clean as fat as possible and cut into 1-inch cubes masa harina (flour maize) for the dredging of 1 bottle (12 ounces) beer 1 teaspoon ground cumin 1 to 3 tablespoons chipotle pepper puree at taste 1 bay leaf 1 tablespoon dried oregano 2 tbsp tea salt 2 c. Tea fresh black pepper 1 / 2 cup fresh cilantro chopped Preheat oven to 450 degrees. Place chiles on a baking sheet and broil until the skins blister and turn black, 25 to 30 minutes. Remove chiles and place them in a paper bag to steam for 10 minutes. When cool enough to handle, Peel, stem, seed and cut peppers strips. In a Dutch oven or saucepan, heat 2 tablespoons oil over medium heat, then cook onions and garlic until what translucent, stirring, about 8 minutes. Remove solids with a slotted spoon and set aside. Add 1 tablespoon of oil in the oven and let Dutch heat. Dredge pork in flour paste, using excess. Brown the pork on all sides over medium heat, cook in two batches, if necessary for cuts of meat do not touch each other, making it with tongs, about 12 minutes for each batch. Use the remaining 1 tablespoon tablespoons olive oil for the second batch. Set the meat aside. Deglaze the bottom of Dutch oven side in about one quarter of beer, scraping browned bits from the bottom with a wooden spoon. Once all crust is collected, add the remaining beer. Return onion, garlic and pork to Dutch oven. Add cumin and cook for 10 minutes. Add Anaheim chilies, chipotle puree, bay leaf, oregano, salt and pepper. Bring mixture to a boil, reduce heat to low. Cover and cook until meat is very tender, stirring occasionally, about 45 minutes. Add the cilantro and cook another 10 minutes, then turn off heat and let the dish sit for 5 minutes. Remove bay leaf and serve.
